Ingredients:

- Sichuan peppercorns
- 1 tablespoon cornstarch
- 1 tablespoon oyster sauce
- 1 teaspoon light soy sauce
- 1 teaspoon tamari sauce
- 1/4 teaspoon white pepper powder
- 1 thumb ginger, sliced
- 6 cloves garlic, smashed
- 5 dried chili peppers (adjust to taste)
- 2 bell peppers, chopped
- 1 teaspoon sugar
- 2 cups chicken stock
- 1 tablespoon sesame oil (for finishing)

Prepare the Beef: Begin by trimming the beef of any excess fat or gristle. Slice it thinly against the grain to ensure a tender texture. Rinse the beef under cold water to remove any red myoglobin.
