Ingredients:
- 1 Meathead AAA Angus Beef NY Striploin Steak
- 8 oz fettuccine pasta
- 1/2 cup diced tomatoes (fresh or canned)
- 1/2 cup corn (fresh, frozen, or canned)
- 1/2 green bell pepper, diced
- 1 tbsp Terra Delyssa Organic Olive Oil
- 2 tbsp Mr. Amish Hand Rolled Salted Butter
- 1/4 cup heavy cream
- 1/4 cup Adams ABF Chicken Stock
- 2 tbsp grated parmesan cheese (optional)
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- Fresh parsley for garnish (optional)
- Salt and pepper to taste
Preparation:
-
Season and Air Fry the Steak: Preheat the air fryer to 400°F (200°C). Season the steak with salt, pepper, garlic powder, onion powder, and drizzle with Terra Delyssa Organic Olive Oil. Let it rest for 10-15 minutes to absorb the flavors. Place the steak in the air fryer basket and cook for 8-10 minutes for medium-rare, flipping halfway through. Let the steak rest for 5 minutes before slicing.
-
Cook the Fettuccine: While the steak is cooking, bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to the package instructions. Drain the pasta, reserving 1/2 cup of pasta water, and set aside.
-
Sauté the Veggies: In a skillet, melt Mr. Amish Hand Rolled Salted Butter over medium heat. Add the diced green pepper, corn, and diced tomatoes. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are tender. Season with salt, pepper, garlic powder, and onion powder to taste.
-
Make the Sauce: To the skillet, add the Adams ABF Chicken Stock (or reserved pasta water) and heavy cream, stirring to combine. Bring it to a simmer, allowing the sauce to reduce and thicken for 3-4 minutes. If using, stir in the parmesan cheese until it melts and the sauce becomes creamy.
-
Combine Pasta and Sauce: Add the cooked fettuccine to the skillet with the creamy vegetable sauce, tossing to coat the pasta evenly. If the sauce is too thick, add more pasta water or chicken stock to reach your desired consistency.
-
Serve: Plate the creamy fettuccine with vegetables and top with slices of the rested air fryer steak. Garnish with fresh parsley and extra parmesan if desired.
